Couscous recipe

Sure, here’s a basic couscous recipe:

Ingredients:

  • 1 1/2 cups couscous
  • 1 1/2 cups boiling water
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon

Instructions:

  1. Place the couscous in a large bowl and pour the boiling water over it. Stir in the salt and 1 tablespoon of the olive oil. Cover the bowl with a plate or plastic wrap and let it sit for 10 minutes.
  2. Meanwhile, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the bell peppers and cook for an additional 5 minutes, until they begin to soften.
  4. Stir in the chickpeas, cumin, cinnamon, cayenne pepper, and black pepper. Cook for another 2-3 minutes.
  5. Fluff the couscous with a fork and add it to the skillet with the vegetables. Add the chopped cilantro and lemon juice and stir everything together until well combined. Serve immediately. Enjoy!
