Ingredients:
- 1 1/2 cups couscous
- 1 1/2 cups boiling water
- 1/2 tsp salt
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 can chickpeas, drained and rinsed
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper

- Juice of 1 lemon
Instructions:
- Place the couscous in a large bowl and pour the boiling water over it. Stir in the salt and 1 tablespoon of the olive oil. Cover the bowl with a plate or plastic wrap and let it sit for 10 minutes.
